Banh Mi Burger

Makes 6 burgers

This is inspired by the banh mi sandwich, a Vietnamese classic that’s basically a bunch of meats with pickled vegetables and a little spice. My secret for perfect burgers is keeping the patty simple just season it with some salt before it goes on the grill. The best finishing touch is putting the buns on the grill sliced side down so the outside gets a little charred and crisp while the inside stays soft and fluffy. It really does make all the difference. It’s worth noting that these burgers are big, which makes them perfect for sharing, especially if there’s lots of other food on your spread.

Recipe

- Preheat a grill or grill pan to medium-high heat.

- Toss together the pickled carrots, pickled chiles, bean sprouts, and cilantro.

- In another bowl, make the spicy mayo by combining the mayonnaise, hot sauce, fish sauce, mustard, and soy sauce.

- Form the ground meat into 6 patties, each 1 inch thick. Season with salt and pepper and grill until desired doneness is achieved, about 5 minutes per side for medium rare.

- Toast the buns sliced side down over low heat. Spread with the spicy mayo and sandwich each with a burger patty and some crunchy pickle slaw.

  • ⅓ cup Pickled Carrots
  • ⅓ cup Pickled Fresno Chiles
  • ½ cup mung bean sprouts

I was so excited that Chef Izard was, apparently, giving us a cookbook with her own home-cooking recipes that I bought the book for full Kindle price on Day One! I so wanted to love this book. Alas, few of the recipes are accessible for the home cook.

Although some of the recipes come from the author''s home cooking, most are presented or tweaked from her restaurants, and very few are simple or straightforward. They''re not something that I''d want to make for a weeknight dinner. I have to say that I''m a huge fan of Chicago chef and restauranteur Izard, the winner of the Triple Crown of cooking honors: she is a Top Chef winner, an Iron Chef, and a James Beard award winner. Her other book, "Girl in the Kitchen," was chock-full of restaurant recipes. So, although I''m delighted to own some of her special, fancier, more-complicated recipes in that book, the recipes in "Gather & Graze" are not the I''m-married-and-have-a-baby home cooking recipes for which I was hoping, which was what the enthusiastic Amazon blurbs from Simmons and Zimmern promised.

Let''s talk about good things: in this Kindle version, TOC, chapter title pages, index, and embedded recipes are clickable. Every recipe has a color photo, and every recipe has a delightful headnote explaining the origin of the dish, how the author uses the dish, and, almost always, useful ingredient tips.

Ingredients: I knew that Chef Izard is a whiz at using Asian ingredients; and, although I generally don''t cook "Asian" dishes, I do love to experiment with Asian ingredients. I was hoping for some great ideas and the author delivered, since the vast majority of the recipes include Asian ingredients. Shrimp dipping sauce that combines a miso vinaigrette with and blue cheese? Count me in.

On the other hand, so many of the ingredients are not accessible for the vast majority of home cooks. For example, goat necks. Surely a chef who has 3 restaurants all with "Goat" in their name knows how to source all things goat, including the neck. However, the author provides no tips for the rest of us on where we might find goat necks. To her credit, the author gives us the recipes to make our own staple spice mixes and condiments, and she almost always says, "or store-bought." Anyone reading this review will know how to amazon hoisin sauce, fish sauce, kimchi, sambal oelek, rice wine, harissa, mirin, masa flour, tamarind paste, and kewpie mayo, if they''re not available in your grocery store. For malt vinegar, soy sauce, and fermented tofu, the author provides not only useful notes, but also brand names. However, other non-amazonable ingredients remain mysteries: for example, galangal, and Jenny Yang''s tofu noodles (pretty sure the latter is a regional thing, but a link to buy them would have been wonderful). Perilla or shiso leaves are deemed "essential" to "Mussels for Two:" where to find?

For the most part, seafood is accessible. However, are one''s scallops fresh enough for ceviche? Can one find soft-shell crab, hamachi collars, or lump crabmeat (one would appreciate knowing whether canned would do)?

Other challenging ingredients for home cooks may be duck breasts, duck hearts, whole duck legs, 8 cups of duck fat, mung bean sprouts, "brown beech" mushrooms, squash blossoms, "Chinese sausage patties," and Hungarian hot peppers. For these, either substitutions or guidance on finding and ordering would have been most welcome.

As for the recipes, some are simple and easy ("Peanut Pork Ragu"). However, most are far more complicated than most home chefs will want to attempt except on a weekend. I''m retired and ancient and actually watch "Top Chef" reruns (I own all of the seasons on Amazon), often featuring Chef Izard, for hours on end while cooking. However, although I buy and cook cauliflower virtually every week during its short season at our Farmers'' Market, I doubt that even I will be up to making all of the garnishes the author''s "Pan-Roasted Cauliflower" requires: "Crunch Butter," "Preserved Lemons (no problem, I can always make preserved lemons!)" and "Pickled Hungarian Hots and Bananas."

Alas, in the end, I''ve bookmarked only 2 recipes: Chef''s miso blue-cheese sauce for shrimp cocktail (will have to wait until my next cocktail party), and "Eggplant Zaalouk" (which will have to wait until this summer''s Farmers'' Market).

I''ve rated this cookbook at 4 stars because it really is amazing, wonderful, and exceptional: however, it may not be what a home cook has wished for: a cookbook to bring our beloved, incredibly-talented Chef Stephanie''s recipes into our home kitchen.

We are big fans of Stephanie and have been to her restaurant in Chicago and enjoyed it immensely. I gave this cookbook as a present after seeing the recipe for goat cheesecake with beer caramel sauce (beer caramel? Sold!) but I have gotten more mileage out of it. The flavor combinations are very unique and interesting. I like the generally spicy/salty/sweet flavor profile of many of the dishes. I''m just disappointed that there are so many typos in the book. The recipe for Eggs with Tomato, Apricot and Melon Sofrito does not actually include any melon. I thought I could improvise but I had no idea what sort of melon this was supposed to incorporate. Watermelon? Cantaloupe? The recipe instructions for the beer caramel says to start with "6oz of hoppy beer" and grapefruit zest and "reduce to about 1 cup." How are you supposed to reduce a liquid that is already less than 1 cup to start with? I took an educated guess that the ingredient was supposed to be "16 oz of hoppy beer" but there is a typo, and it turned out well. But 6 oz of beer obviously would not have worked.

The recipes cover a lot of cuts of meat and ingredients that you''re not going to find in your local supermarket so be prepared to hunt around. I would love to try the hamachi collar recipe but I have never seen fish collars for sale anywhere. Also, many recipes call for a little bit of other recipes in the book, like harissa sauce or "crunch butter" and I dislike having to make a big batch of something just to add it to a recipe.

Maybe the typos were/have been fixed in later publications.

I bought this cookbook for a friends birthday. She loves Stephanie Izard and we’ve followed some of her recipes using her Instagram stories. I was very disappointed with our first recipe we made. The hoisin and skirt steak with the blueberry pico. Her recipe in the book leaves out quite a few important details and uses the wrong ratios. She calls for dark soy sauce and 4 dates. We made the hoisin following this recipe and it was super thin while she comments it might be too thick. My friend looked up Stephanie’s Instagram and her third story contains a very different hoisin recipe that uses 12 dates and sweet soy sauce (very different texture than dark soy sauce!). We found it pretty disappointing that her published cookbook contains a sauce that fails but we were able to find the correct recipe easily on her Instagram.
